Instant Pot Chicken Broccoli Rice

Ingredients
- 2 TB Unsalted butter
- 1 LB Chicken breast, cubed
- 2 Cloves garlic, minced
- 1 Onion, minced
- 1 1/3 Cup Long grained white rice, rinsed 5 min or till clear
- 1 1/3 Cup Chicken broth
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 Bunch Broccoli (trim, rinse, steam florets. Or use 2 frozen bags steamer broccoli)
- 1/2 Cup Milk
- 1/2 TB Flour
- 1 Cup Shredded Cheddar
Instructions
- Sauté butter, chicken, garlic, and onion till translucent (about 5 minutes).
- Stir in rice, broth, salt, and pepper.
- High Pressure 9 minutes, quick release.
- Mix and stir in milk & flour.
- Stir in broccoli and cheddar.
- For kids, serve with reduced sodium Ritz crackers
