Egg Burritos (Frozen)

Ingredients

  • 12 oz Thick cut bacon
  • 16 oz Pork sausage
  • 1 TB Butter
  • 12 Eggs
  • 1/3 cup Milk
  • 1 TB Olive oil
  • 2 Green peppers
  • 1 Red pepper
  • 1 White onion
  • 8 Burrito tortillas
  • 2 cups Shredded cheese

Instructions

  • Bake bacon on foil lined cookie sheet @ 375 for 25-30 minutes. Flip at 20 minutes.
  • Pan fry sausage (see instructions on package).
  • Melt butter on medium, whisk together eggs and milk, scramble eggs.
  • Dice veggies and saute in olive oil till onions are translucent.
  • Mix all the cooked ingredients in a bowl and let cool.
  • Set aside 8 sheets of foil and put cheese in a bowl.
  • Heat tortilla for a few seconds till soft. Set on piece of foil. Add 1 cup of egg mix. Sprinkle with cheese. Roll into a burrito. (Youtube how to roll a burrito). Wrap in foil. Repeat.
  • Freeze in empty tortilla bag. To heat remove from foil. Wrap in paper towel. Microwave on defrost 4 1/2 minutes. Flip. Cook normal 2 1/2 minutes.
  • Serve with sour cream and Sriracha.
